Chicken Soup with Letters and Numbers Kiddo Pasta

Ingredients:

​

  • 1 whole chicken (3 to 4 pounds), skin removed, cut into eighths

  • 10 cups of water

  • 2 medium red onion, chopped

  • 2 celery stalks, chopped

  • 4 garlic cloves, finely chopped (optional)

  • 2 carrots, chopped

  • ¼ cup olive oil

  • salt and freshly ground black pepper

  • 8 oz HELIOS Organic Letters and Numbers Kiddo Pasta

 

Method:

​

1. Bring chicken, water, and 1 tablespoon salt to a boil in a large pot. Skim foam; add onions, celery, and garlic (if desired). Reduce heat, simmer, partially covered, for 30 minutes.

2. Remove breast, set aside. Add carrots; simmer, partially covered, for 30 minutes.

3. Remove remaining chicken, allow to cool slightly; discard bones, back, and wings; cut remaining meat into bite-size pieces; reserve.

4. Add HELIOS Organic Letters and Numbers Kiddo Pasta to the pot; simmer for 3-4 minutes before adding the chicken back in; cook for additional 2 minutes to warm chicken through.

Little Dinosaurs Kiddo Pasta with Fresh Tomato Sauce

Ingredients:

​

  • 6 tablespoons Extra Virgin Olive Oil

  • 1 white onion, finely chopped

  • 1 medium carrot, grated

  • 28 oz can of whole plum tomatoes in juice, coarsely chopped/pureed

  • 1 cup water

  • salt and freshly ground black pepper

  • Greek oregano, as needed

  • 1 box HELIOS Organic Little Dinosaurs Kiddo Pasta

 

 

 

 

Method:

​

1. Heat two tablespoons of olive oil over medium heat in a medium saucepan until hazy. Add the onion and cook until softened, stirring frequently. Add the carrot, tomatoes, and 1 cup of water and season with salt to taste.

2. Simmer over medium-low heat, stirring occasionally, until sauce has thickened, approximately 15-20 minutes; remove from heat and stir in 2 tablespoons olive oil and oregano if desired.

3. Cook HELIOS Organic Little Dinosaurs Kiddo Pasta in a large pot of boiling salted water with 2 tablespoons olive oil, until al dente (approximately 4-5 minutes); drain and reserve ½ cup of pasta water.

4. Combine tomato sauce, HELIOS Organic Little Dinosaurs Kiddo Pasta, and the reserved pasta water in a pot over low heat, until fully combined.

Green Pea Mac and Cheese with Little Animals Kiddo Pasta

Ingredients:

​

  • 1 box of HELIOS Organic Little Animals Kiddo Pasta

  • 4 tablespoons extra virgin olive oil

  • 2 cups milk

  • 3 eggs, beaten

  • 20 ounces cheddar cheese, grated

  • salt and freshly ground pepper

  • 2 cups cooked green peas

 

Method:

 

1. Cook HELIOS Organic Little Animals Kiddo Pasta in a large pot of boiling salted water, until al dente, approximately 4-5 minutes; drain and rinse under cold water until completely cooled. Set aside.

2. Whisk milk, eggs, and olive oil in a bowl; add mixture to a pot over low heat; whisking constantly, add the cheese, and season with salt and pepper to taste. Continue stirring until cheese is melted and all ingredients have combined and thickened slightly.

3. Add HELIOS Organic Little Animals Kiddo Pasta and peas to the sauce, stirring until pasta is heated through.
